We source single-origin beans from micro-lots across the coffee belt, roast them in small batches at our South of Market facility, and pull every espresso with the precision it deserves. This is coffee that asks for your full attention.
From micro-lot to your cup —
nothing skipped
Blue Java began with a simple conviction: that exceptional coffee deserves an unbroken chain of care from farm to cup. We work directly with growers in Ethiopia, Colombia, Guatemala, and Kenya — paying prices well above Fair Trade — to secure the year's best micro-lot harvests.
Back in San Francisco, each lot is roasted in 5-kilogram batches on our vintage Probat. We cup every roast to determine its optimal profile, then brew it fresh daily at our café on Main Street. The result is a menu that changes with the seasons and reflects the character of each harvest.
Precision is our language
Every variable is considered — water temperature, grind size, extraction time, bean age. We don't rush a pour. We don't guess a dose. We measure, we taste, and we adjust until the cup tells the truth.
Sourcing
We visit farms when possible, cup green samples in our roastery, and commit to contracts that reward quality and sustainability at the origin.
Roasting
Five-kilogram batches on a restored Probat allow us to shape each curve of the roast profile. Light for brightness, medium for balance — never beyond what the bean can carry.
Extraction
We weigh every shot, time the flow, and taste the result. A good espresso is repeatable only through discipline — and we are disciplined.
